VALCALEPIO
ROSSO RISERVA D.O.C.

Valcalepio Rosso Riserva is made with 40% Merlot grapes and (60%) Cabernet Sauvignon grown in the municipality of Torre de’ Roveri;  the natural alcohol content is 12% vol. The grapes undergo separate vinification in order to obtain the best possible organoleptic characteristics with fermentation at a controlled temperature and then during the winter the Bordeaux type blending takes place, after which the maturation period begins. This takes place partly in barriques and partly in 20 hectolitre Allier oak barrels and lasts 12-28 months; it is followed by assemblage and bottling. The wine is matured in the bottles for six months before drinking.

The wine is ruby red in colour, with morello cherry fruit with notes of spice and vanilla in the nose; on the palate it is dry and tangy with excellent structure. Recommended serving temperature is 20°C. It is an ideal accompaniment for red meats, game and mature cheeses.
