The Valcalepio Rosso La Tordela is produced by vinifying separately grapes of Merlot and Cabernet sauvignon ; in spring we proceed to the Bordeaux-style cut.
The wine is then aged for at least a year in Allier oak barrels.
It is a ruby red wine, intense and fruity aroma with hints of marasca, vanilla and spices, dry taste on a vigorous body.
It goes perfectly with game and cheeses.
Serve at 18 ° C.
Considerations on the organoleptic aspect of Valcalepio Rosso
The Valcalepio red wine comes from a skilful blend of Merlot and Cabernet Sauvignon ; the percentages, within the variables provided for by the specification, vary according to the type of product to be produced. In the case of Valcalepio rosso we tend to have a higher percentage of Merlot, while when we want to produce Valcalepio rosso riserva the contribution of Cabernet increases.
The Valcalepio rosso undergoes an aging of 3-6 months in medium-capacity barrels (20- hl) and further rest in the bottle before being put on the market.
From an organoleptic point of view, the Valcalepio wine has a more or less intense ruby red color depending on the vintage and the soil, an intense and characteristic aroma with a marked fruity scent reminiscent of sour cherry and the sour fruit jam in general, in the background presence of vanilla and spicy notes.
The taste is always a very harmonious wine with a fresh vein that supports the retro-smell where strong note the fruity and vanilla, the final feeling is always a good structure with a marked roundness and persistence.
The Valcalepio rosso reserve undergoes an aging of 12-24 months in oak barrels of medium and small capacity, after a refinement of 6-12 months in bottle before being placed on the market.
At the tasting it has a ruby red color with garnet reflections, an intense and fine scent with a marked presence of vanilla, licorice, sweet spices, while the fruity and characteristic note of sour fruit and jam stands out on the bottom. The taste is full, of great structure with marked roundness due to the presence of sweet tannins that make the wine soft and pleasant. The retrolfatto confirms the presence of a range of fine and evolved perfumes with notes of vanilla, licorice, sweet spices, fruit. The final sensation is warm, pleasant with a decidedly very pronounced persistence.
Both wines are very modern and attentive to the needs of consumers who want fruity wines, with good structure but at the same time soft, intriguing, good drinking and therefore easily adaptable to every moment of the day.
